Wisteria Fritters

Turning wildflowers into fritters has to be one of the most delicious ways to connect with nature. Choose flowers that are mature, but not past maturity. Use within a few hours of collecting. Susan and I prepared a simple batter of one egg (beaten) and 3/4 cup soymilk. Our breading was about 2 cups of cornmeal with 2 tablespoons of ground ginger. Instead of deep frying the fritters, we chose a heart-healthy alternative: baking in a skillet at 400 degrees for about 20 minutes. The fritters were great tasting and very filling. The ginger was an excellent compliment to the floral taste of the Wisteria. Try this with other flowers as well, including elder, milkweed, and black locust.
